Madras Mixture

I love Chennai…we miss our hometown.  Madras mixture is one of the special mixture items which we enjoyed in almost all the sweet stalls in Chennai. It is a combination of omapodi, karaboondhi, pottu kadalai (fried gram), raisins, cashew, curry leaves etc. Here are ingredients to mix …

Ingredients for Karaboondhi:

  • Besan flour – 1 cup
  • Rice flour – 1 tsp
  • Water – ¼ cup
  • Salt to taste
  • Oil for deep frying


Procedure:

Mix all the above ingredients except oil and make a batter of idli batter consistency. Use boondhi ladle to make boondhis. Deep fry in medium heat and fry it until boondhis turn crisp.





Ingredients for Madras mixture:

  • Omapodi – 1 cup
  • Karaboondhi – 1cup
  • Poha(flattened rice) – 1cup
  • Fried gram -  ¼ cup
  • Raisins – 3 tsp
  • Cashew nut – 2tsp
  • Curry leaves – one sprig
  • Chilly powder – 1tsp (adjust to your taste)
  • Garlic – 1 (optional)
  • Sugar – 2 tsp
  • Salt to taste
Procedure:

  1. Mix  omapodi, karaboondhi with the ladle.
  2. Deep fry fried gram, poha, curry leaves and cashew nut. Add this to the mixture.
  3. Also add crushed garlic, chilly powder, sugar, raisins and salt to taste.
