mixture is one of the special mixture items which we enjoyed in almost all the
sweet stalls in Chennai. It is a combination of omapodi, karaboondhi, pottu
kadalai (fried gram), raisins, cashew, curry leaves etc. Here are ingredients

Ingredients for Karaboondhi:
- Besan flour – 1 cup
- Rice flour – 1 tsp
- Water – ¼ cup
- Salt to taste
- Oil for deep frying
Procedure:
Mix all the
above ingredients except oil and make a batter of idli batter consistency. Use
boondhi ladle to make boondhis. Deep fry in medium heat and fry it until
boondhis turn crisp.
Ingredients for Madras mixture:
- Omapodi – 1 cup
- Karaboondhi – 1cup
- Poha(flattened rice) – 1cup
- Fried gram - ¼ cup
- Raisins – 3 tsp
- Cashew nut – 2tsp
- Curry leaves – one sprig
- Chilly powder – 1tsp (adjust to your taste)
- Garlic – 1 (optional)
- Sugar – 2 tsp
- Salt to taste
Procedure:
- Mix omapodi, karaboondhi with the ladle.
- Deep fry fried gram, poha, curry leaves and cashew nut. Add this to the mixture.
- Also add crushed garlic, chilly powder, sugar, raisins and salt to taste.
